Delicious BBQ Pineapple Chicken Kabobs that are easy to make and perfect for grilling.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 bell pepper (any color), cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1/2 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 wooden skewers (soaked in water for 30 minutes)

Instructions

  1. In a large bowl, combine the barbecue sauce, olive oil, garlic powder, onion powder, salt, and black pepper. Mix well.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, pineapple, bell pepper, and red onion onto the soaked skewers, alternating between each ingredient.
  5. Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Brush additional barbecue sauce on the kabobs during the last few minutes of cooking for extra flavor.
  7. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For added flavor, marinate the chicken overnight in the barbecue sauce mixture.
