Delicious BBQ Pineapple Chicken Kabobs that are easy to make and perfect for grilling.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh pineapple, cut into 1-inch cubes
- 1 bell pepper (any color), cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 1/2 cup barbecue sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 wooden skewers (soaked in water for 30 minutes)
Instructions
- In a large bowl, combine the barbecue sauce, olive oil, garlic powder, onion powder, salt, and black pepper. Mix well.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, pineapple, bell pepper, and red onion onto the soaked skewers, alternating between each ingredient.
- Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Brush additional barbecue sauce on the kabobs during the last few minutes of cooking for extra flavor.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken overnight in the barbecue sauce mixture.
- Substitute shrimp or beef for the chicken, adjusting the cooking time as needed.
