A delicious and refreshing BBQ Chicken Skewer Salad perfect for summer gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound), cut into 1-inch cubes
  • 1/4 cup BBQ sauce, plus extra for drizzling
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 4 cups mixed salad greens
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup ranch dressing or your favorite dressing

Instructions

  1. In a bowl, combine the chicken cubes, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  3. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  4. While the chicken is grilling, prepare the salad by combining the cherry tomatoes, cucumber, red bell pepper, red onion, and mixed salad greens in a large bowl.
  5. Once the chicken is done, remove it from the skewers and let it rest for a couple of minutes. Then, add the chicken to the salad mixture.
  6. Drizzle the salad with ranch dressing and toss gently to combine. Top with shredded cheddar cheese if desired.
  7. Serve immediately with extra BBQ sauce on the side for drizzling.

  • For a spicy kick, add a teaspoon of cayenne pepper to the marinade or use a spicy BBQ sauce.
