Description

A rich and creamy banana cream cheesecake that combines the flavors of ripe bananas and smooth cream cheese, topped with whipped cream and banana slices.


Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup melted unsalted butter
  • 1 cup sugar, divided
  • 16 ounces softened cream cheese
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 cup full-fat sour cream
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1 banana, sliced for decoration

Instructions

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, blend the crushed graham crackers with the melted butter until well combined.
  3. Firmly press this mixture into the base of a 9-inch springform pan to create a solid crust.
  4. Bake for about 10 minutes, then allow it to cool completely.
  5. In a separate large bowl, use an electric mixer to beat the softened cream cheese with ¾ cup of sugar and the vanilla extract until silky and smooth.
  6. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next.
  7. Gently fold in the sour cream and the mashed bananas until well mixed.
  8. Pour the creamy banana mixture over the cooled crust, using a spatula to even out the surface.
  9. Bake for 50 to 60 minutes, or until the center is just set with a slight jiggle.
  10. Once done, turn off the oven and let the cheesecake sit inside for an hour to cool down gradually.
  11. Transfer the cheesecake to room temperature and then refrigerate for a minimum of 4 hours or preferably overnight to set properly.
  12. When ready to serve, whip the heavy cream with the remaining ¼ cup of sugar and confectioners’ sugar until soft peaks form.
  13. Generously spread or pipe the whipped cream on top of the cheesecake and finish with banana slices for decoration.

Notes

  • For a chocolate flavor, fold in ¼ cup of cocoa powder into the cream cheese mixture.
