A rich and creamy banana cream cheesecake that combines the flavors of ripe bananas and smooth cream cheese, topped with whipped cream and banana slices.

- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- 1 cup sugar, divided
- 16 ounces softened cream cheese
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 cup full-fat sour cream
- 2 ripe bananas, mashed
- 1 cup heavy cream
- 2 tablespoons confectioners’ sugar
- 1 banana, sliced for decoration
Instructions
- Preheat your oven to 325°F.
- In a mixing bowl, blend the crushed graham crackers with the melted butter until well combined.
- Firmly press this mixture into the base of a 9-inch springform pan to create a solid crust.
- Bake for about 10 minutes, then allow it to cool completely.
- In a separate large bowl, use an electric mixer to beat the softened cream cheese with ¾ cup of sugar and the vanilla extract until silky and smooth.
- Incorporate the eggs one at a time, ensuring each is fully blended before adding the next.
- Gently fold in the sour cream and the mashed bananas until well mixed.
- Pour the creamy banana mixture over the cooled crust, using a spatula to even out the surface.
- Bake for 50 to 60 minutes, or until the center is just set with a slight jiggle.
- Once done, turn off the oven and let the cheesecake sit inside for an hour to cool down gradually.
- Transfer the cheesecake to room temperature and then refrigerate for a minimum of 4 hours or preferably overnight to set properly.
- When ready to serve, whip the heavy cream with the remaining ¼ cup of sugar and confectioners’ sugar until soft peaks form.
- Generously spread or pipe the whipped cream on top of the cheesecake and finish with banana slices for decoration.
Notes
- For a chocolate flavor, fold in ¼ cup of cocoa powder into the cream cheese mixture.
- Enhance the crust by mixing in ½ cup of chopped walnuts or pecans for a nutty crunch.
