Ingredients

  • 1 ½ pounds flank steak
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced
  • 1 cup fresh basil leaves, chopped
  • ½ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper to create a marinade.
  2. Place the flank steak in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat. Remove the flank steak from the marinade and discard the marinade.
  4. Grill the flank steak for about 5-7 minutes on each side for medium-rare, or until it reaches your desired level of doneness.
  5. Remove the steak from the grill and let it rest for 5-10 minutes before slicing.
  6. While the steak is resting, combine the cherry tomatoes, diced mozzarella, and chopped basil in a bowl.
  7. Slice the flank steak against the grain into thin strips and serve topped with the Caprese mixture.
