A deliciously easy recipe for baked zucchini and cheese, perfect as a side dish or a light meal.

- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine the sliced zucchinis, salt, black pepper, garlic powder, and oregano. Toss until the zucchinis are evenly coated.
- In a separate bowl, mix the mozzarella cheese, Parmesan cheese, and breadcrumbs together.
- In a baking dish, layer half of the zucchini mixture on the bottom. Sprinkle half of the cheese and breadcrumb mixture over the zucchinis. Add the remaining zucchini and top with the rest of the cheese and breadcrumb mixture.
- Drizzle the olive oil over the top of the dish.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the zucchinis are tender.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a creamier texture, add a layer of ricotta cheese between the zucchini layers.
- To add some heat, sprinkle red pepper flakes over the top before baking.
