- 2 ripe avocados
- 4 large eggs
- 4 ounces sliced turkey breast
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika (optional)
- Chopped fresh chives or parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the avocados in half and remove the pits. Scoop out a little extra flesh from the center to create enough space for the eggs.
- Place the avocado halves in a baking dish, cut side up. If they don’t sit flat, you can use crumpled aluminum foil to stabilize them.
- Crack an egg into each avocado half. If the egg is too large, you can discard a little of the egg white to fit.
- Season each egg with salt, pepper, and paprika if using.
- Tear the turkey slices and place them around the avocado halves in the baking dish. Drizzle olive oil over everything.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny, or to your desired doneness.
- Remove from the oven and garnish with chopped chives or parsley if desired. Serve immediately.
Notes
- For a spicy kick, add a few dashes of hot sauce or sprinkle red pepper flakes on top before baking.
- Substitute the turkey with cooked bacon or ham for a different flavor profile. You can also add cheese on top of the eggs for extra creaminess.
