Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 6 slices of bacon, chopped
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  2. Add the frozen peas and carrots to the skillet and sauté for 3-4 minutes until heated through.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  4. Add the cooked rice to the skillet, breaking up any clumps. Stir in the soy sauce, sesame oil, garlic powder, and the cooked bacon. Mix everything well and cook for an additional 3-5 minutes, allowing the rice to get slightly crispy.
  5. Stir in the sliced green onions and season with salt and pepper to taste. Cook for another minute, then remove from heat and serve hot.
