  • 1 medium apple, peeled and diced (such as Granny Smith or Honeycrisp)
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup dried cranberries or raisins
  • 2 tablespoons maple syrup
  • 1 tablespoon butter (optional)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Wash the sweet potatoes and pierce them several times with a fork.
  3. Rub them with olive oil, salt, and black pepper.
  4. Place them on a baking sheet and bake for 45-60 minutes, or until tender.
  5. In a medium bowl, combine the diced apple, pecans, dried cranberries, cinnamon, nutmeg, ginger, and maple syrup. Mix well to combine.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  7. Cut them in half lengthwise and scoop out a small portion of the flesh to create a cavity for the filling.
  8. Incorporate the scooped-out sweet potato flesh into the apple mixture, adding butter if desired. Mix until well combined.
  9. Spoon the apple mixture back into the sweet potato halves.
  10. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, until heated through and slightly caramelized on top.
  11. Garnish with fresh parsley or chives if desired before serving.
