- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

- 1 medium apple, peeled and diced (such as Granny Smith or Honeycrisp)
- 1/4 cup chopped pecans or walnuts
- 1/4 cup dried cranberries or raisins
- 2 tablespoons maple syrup
- 1 tablespoon butter (optional)
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat the oven to 400°F.
- Wash the sweet potatoes and pierce them several times with a fork.
- Rub them with olive oil, salt, and black pepper.
- Place them on a baking sheet and bake for 45-60 minutes, or until tender.
- In a medium bowl, combine the diced apple, pecans, dried cranberries, cinnamon, nutmeg, ginger, and maple syrup. Mix well to combine.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut them in half lengthwise and scoop out a small portion of the flesh to create a cavity for the filling.
- Incorporate the scooped-out sweet potato flesh into the apple mixture, adding butter if desired. Mix until well combined.
- Spoon the apple mixture back into the sweet potato halves.
- Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, until heated through and slightly caramelized on top.
- Garnish with fresh parsley or chives if desired before serving.
Notes
- For a savory twist, add cooked sausage or ground turkey to the apple mixture.
- Try using different nuts or seeds, such as almonds or sunflower seeds, for added crunch and flavor.
