Ingredients

  • 1 ½ cups Biscoff cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples (about 2 medium apples)
  • 1 teaspoon cinnamon
  • ½ cup brown sugar
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine the Biscoff cookie crumbs and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. In another bowl, toss the diced apples with cinnamon and set aside. Fold the apples into the cream cheese mixture until evenly distributed.
  7. Pour the mixture over the cooled crust in the springform pan.
  8. In a separate bowl, combine the rolled oats, brown sugar, flour, and chopped pecans (if using). Drizzle in the melted butter and mix until crumbly.
  9. Sprinkle the oat mixture evenly over the cheesecake filling.
  10. Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
  12. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
