Andalusian Alfajores are delightful cookies filled with dulce de leche, offering a perfect blend of flavors and textures.

- 2 cups all-purpose flour
- 1 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup dulce de leche (or caramel sauce)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, salt, and ground cinnamon. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be slightly sticky.
- Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
- On a lightly floured surface, roll out one disk of dough to about 1/4 inch thick. Use a round cookie cutter (about 2 inches in diameter) to cut out cookies. Place them on the prepared baking sheet.
- Repeat with the second disk of dough. Gather any scraps, re-roll, and cut out additional cookies.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
- Once cooled, spread a generous layer of dulce de leche on the bottom of one cookie and sandwich it with another cookie. Dust the tops with powdered sugar before serving.
Notes
- For a chocolate twist, dip the finished alfajores in melted dark chocolate after assembling.
