Ingredients

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup dulce de leche (or caramel sauce)
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be slightly sticky.
  6. Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. On a lightly floured surface, roll out one disk of dough to about 1/4 inch thick. Use a round cookie cutter (about 2 inches in diameter) to cut out cookies. Place them on the prepared baking sheet.
  8. Repeat with the second disk of dough. Gather any scraps, re-roll, and cut out additional cookies.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
  10. Once cooled, spread a generous layer of dulce de leche on the bottom of one cookie and sandwich it with another cookie. Dust the tops with powdered sugar before serving.
