- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1 tablespoon maple syrup (optional)
- 1 teaspoon vanilla extract
- Cooking spray or oil for the waffle iron
- 1 cup Greek yogurt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tablespoon honey or maple syrup (optional, for drizzling)
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease with cooking spray or oil.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Whisk until well blended.
- In another bowl, whisk together the eggs, almond milk, maple syrup (if using), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter sit for about 5 minutes to thicken.
- Pour an appropriate amount of batter onto the preheated waffle iron (about 1/2 cup, depending on your waffle iron size). Close the lid and cook until golden brown, usually about 4-5 minutes.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve the waffles topped with Greek yogurt and mixed berries. Drizzle with honey or maple syrup if desired.
Notes
- For added flavor, mix in a teaspoon of cinnamon or a tablespoon of cocoa powder into the batter.
- Substitute the mixed berries with sliced bananas or peaches for a different fruit topping.
