- 1 cup egg whites (about 8 large eggs)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.
- In a large mixing bowl, combine the egg whites, shredded cheese, diced bell peppers, diced green onions, salt, and black pepper. Stir until well mixed.
- Pour the egg white mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before gently removing the egg bites from the muffin tin.
- Serve warm or allow to cool completely and store in an airtight container in the refrigerator for up to 4 days.

- For added flavor, consider mixing in cooked bacon, sausage, or spinach.
